Apfelstrudel

Viennese apple strudel

Ingredients (for 8 servings):  

Dough:                           

  • 250 g fine flour (tepung terigu)
  • vegetable oil (sun flower or corn oil)
  • 1 pinch of salt
  • 1/8 l water, lukewarm (not too cold)
  • 2 tablespoons melted butter (unsalted) to drizzle the dough
  • 2 egg yolks to drizzle the dough
  • additional fine flour for the work surface



or alternatively: ready made dough (fillo pastry)

Filling:

  • 100 g bread crumbs
  • 200 g butter (unsalted)
  • juice of 1 lemon
  • 100 g sugar
  • icing sugar
  • 2 tablespoons of vanilla sugar (if not available: place vanilla in icing sugar and let it rest for several days)
  • 1 pinch of cinnamon powder
  • 1,5 kg apples (Granny Smith or Golden Delicious)
  • 60 g dark raisins
  • 50 g chopped walnuts (optional)


Recipe:  

Spread some flour onto a work surface and knead the dough ingredients (flour, vegetable oil, salt and water) into a smooth, elastic dough. Form the dough to a ball, drizzle melted butter over it and place it in a soup bowl dribbled with vegetable oil. Cover the bowl with a kitchen cloth and let it rest refrigerated for minimum 30 minutes.  

Place a tablecloth on a working surface and powder it lightly with flour. Roll out the dough into a square with a rolling pin. Cover your hands with flour, place one hand under the dough and use the other hand to carefully pull the dough out from the center until it is very thin, almost transparent.  

Alternatively you can also buy the finished dough (fillo pastry) which tastes good as well !  

Peel and remove the seeds from the apples, slice them into very thin slices and dribble over lemon juice. Mix apples with raisins, 1 tablespoon vanilla sugar and chopped walnuts (optional) in a bowl.  

Melt the butter, use half of it to brush the pastry dough (with a small amount of sugar)  and use the other half to fry the breadcrumbs. Mix the fried breadcrumbs with 1 tablespoon vanilla sugar and cinnamon powder and sprinkle over dough. Spread apple/walnut/raisin mixture on dough, leaving a small border of dough on all sides. Cover the mixture with fried breadcrumb mix. Roll the dough with the help of a kitchen cloth and make sure that the ends are well closed.  

Remove the cloth and place strudel on a baking sheet (flat sheet pan) greased with butter and brush it with a small amount of melted butter and beaten egg. In an oven preheated to 180 - 200° C bake the apple strudel between 30 – 45 minutes, occasionally brushing with melted butter, until the colour turns to a golden brown. Take the apple strudel out of the baking oven, let it cool down and dust with icing sugar.  

Apfelstrudel can be served warm or cold.
