Viennese browned omelette

Kaiserschmarren is a delicious dessert, but can be eaten also as main course.  

Ingredients (for 4 servings):

  • 250 ml milk
  • 6 eggs
  • 200 g fine flour (tepung terigu)
  • 2 tablespoons sugar
  • 1 tablespoon vanilla sugar (if not available: place vanilla in icing sugar and let it rest for several days)
  • 2 tablespoons raisins
  • butter (unsalted)
  • pinch of salt
  • sugar
  • icing sugar
  • plum or apple puree / mousse / compote


Separate the egg whites from yolks. Beat the egg whites and sugar in a bowl until stiff. In another bowl combine milk, flour, egg yolks, vanilla sugar and salt and stir until batter is stiff. Mix in the egg whites and fold carefully.

In a large ovenproof pan heat some butter and pour in the mixture. First brown on the stove, turn over. Afterwards place the pan in a preheated oven at 180°C and bake both sides until brown. Take the pan out of the oven and tear mass into pieces with 2 forks. Mix in the raisins, sprinkle with sugar and put into the oven again until the sugar is caramelized.

Sprinkle Kaiserschmarren with icing sugar and serve with ready made plum or apple puree.
