Wiener Schnitzel

For the traditional Wiener Schnitzel, the Viennese normally use veal. But you can also use pork, chicken or turkey breast. It will taste just as delicious either way !    

Ingredients (for 4 servings):  

Schnitzel:

  • 8 veal cutlets about 90 g each (alternatively pork cutlets, chicken or turkey breast)



Breading:

  • 100 g fine flour (tepung terigu)
  • 4 eggs
  • 200 g very fine breadcrumbs (tepung roti)
  • 300 g butter (unsalted)
  • 100 ml vegetable oil (corn or sunflower oil)
  • salt
  • lemon slices and parsley for garnish


Potatoes with parsley:

  • 800 g potatoes butter(unsalted)
  • parsley


or
Potato salad:

  • 1 kg of potatoes
  • 1 onion (bawang bombay)
  • apple vinegar
  • vegetable oil (corn or sunflower oil)
  • salt
  • pepper


Recipe:  

For the breading prepare three plates: Put flour on one and breadcrumbs on a second. Put eggs on a third and beat them with a fork.  

Pound the meat thin (about 2 – 4 mm) and cut the fringes carefully. Salt lightly on both sides and lightly coat the cutlets in the flour, dip them into the eggs and finally coat them in the breadcrumbs. Heat the butter and oil in a large pan, allow to get very hot. Fry the cutlets until golden brown on both sides. There should be enough fat in the saucepan so that the cutlets float in the pan and do not touch the bottom. Remove and drain them on paper towel. Fry the parsley in the remaining fat and drain them as well. Serve Wiener Schnitzel garnished with parsley and lemon slices.  

Suggested side dishes are Petersilienkartoffel (potatoes with parsley) and Erdäpfelsalat (potato salad).  

For potatoes with parsley boil 800 g potatoes and peel them. Heat butter in a frying pan and sauté potatoes with parsley in the hot butter.  

For potato salad boil 1 kg of potatoes until soft, peel them and cut them into slices. Add small pieces of sliced onion. Mix a marinade by using apple vinegar, vegetable oil, salt and pepper and pour it over the potatoes. Let it sit a little bit before serving.
